Being user-centered and having a business sense is a good way for designers, chefs, architects to be successful. But I also see another model in which the designer, chef, architect creates what they love and are fortunate enough that other people like it as well and/or they attract people that share their taste through what they create. Usually what the designer loves is based on things that are already successful.
